Sticky Sausage and Halloumi Traybake
Sticky Sausage and Halloumi Traybake with roasted vegetables and sweet mustard glaze. An easy one pan dinner recipe.

I chose to make this traybake because it brings a full meal together on one pan with very little effort. Sausage gives deep flavor, the vegetables soften and caramelize, and the halloumi turns golden on the edges. It feels like the kind of dinner you can rely on when time feels short. Everything roasts together and comes out looking generous and comforting.
What I like most about this recipe is how the flavors blend while it cooks. The sausage juices coat the vegetables, and the halloumi adds a salty bite in every forkful. The edges turn slightly crisp while the centers stay tender. It is the sort of meal which smells good long before it reaches the table.
When I served this at home, there was very little talking. Plates were filled, then quietly refilled. Even the vegetables disappeared without complaint. Meals like that tend to stay in the regular dinner rotation, and this one earned its place quickly.
