Brown Sugar Cardamom Snack Cake is a soft, single-layer cake with warm spice and a thin vanilla glaze. It is easy to cut into squares for an afternoon coffee break, a casual dessert, or a small gathering.
Light brown sugar gives the crumb a gentle caramel flavor. Ground cardamom adds a fragrant, slightly citrusy note, with just a little cinnamon to round it out. The glaze is deliberately thin, so the cake stays the main attraction.
This recipe uses a 9-inch square pan and ordinary baking ingredients. There is no fruit to prepare, no filling to make, and no layer cake assembly. Let the cake cool fully before glazing so you get a pale coating on top rather than a glaze that disappears into the crumb.

Questions You May Have About This Recipe
What does cardamom taste like?
It has a warm, fragrant flavor with citrusy and floral notes. Use ground green cardamom, not smoky black cardamom. Start with the measured amount; a little goes a long way.
Can I use dark brown sugar?
Yes, in the same weight. Expect a darker cake with a stronger molasses flavor. Light brown sugar lets the cardamom come through more clearly.
Do I need buttermilk?
This version uses whole milk and sour cream. Keep both in the stated amounts rather than substituting a full cup of buttermilk, which would change the batter’s thickness.
Can I leave off the glaze?
Yes. The plain cake can be served as it is. The glaze adds sweetness and a light vanilla finish, but it is not needed for the cake to hold together.
What You Need to Make Brown Sugar Cardamom Snack Cake

Have a 9-inch square metal cake pan at least 2 inches deep, parchment paper, two bowls, a hand mixer, a spatula, and a cooling rack ready. Softened butter should give slightly when pressed but should not be oily or melted.

How to Make Brown Sugar Cardamom Snack Cake
Whisk the flour, leavening, salt, and spices in one bowl. In another, beat the softened butter and brown sugar until lighter and fluffy. Add the eggs one at a time, then the vanilla and sour cream. Mix in the flour mixture alternately with the milk, using low speed and stopping as soon as the batter comes together.
Spread the batter evenly in the prepared pan and bake until the center is set. After cooling, stir the glaze until smooth and spread it in a thin layer over the top. It should settle into a soft, pale coating, not a thick layer of frosting.
Tips
- Check that your cardamom smells fragrant before using it. Old ground spice can taste flat.
- Break up any hard lumps in the brown sugar before creaming.
- Scrape the bowl after adding the eggs so no unmixed butter stays at the bottom.
- Use the stated pan size. A smaller pan makes the batter deeper and changes the bake time.
- Check the cake itself as well as the clock. The center should spring back lightly and a tester should show no raw batter.

Brown Sugar Cardamom Snack Cake
A soft brown sugar and cardamom cake with a thin vanilla glaze.
Ingredients
- For the cake
- 1 1/2 cups (190 g) all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1 teaspoon ground green cardamom
- 1/4 teaspoon ground cinnamon
- 1/2 cup (113 g) unsalted butter, softened
- 3/4 cup (150 g) packed light brown sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1/2 cup (120 g) full-fat sour cream, room temperature
- 1/4 cup (60 ml) whole milk, room temperature
- For the vanilla glaze
- 3/4 cup (90 g) powdered sugar, sifted
- 1 tablespoon whole milk, plus up to 1 teaspoon more as needed
- 1/2 teaspoon vanilla extract
Instructions
- Heat the oven to 350°F (175°C). Grease a 9-inch square metal pan and line it with a parchment sling.
- Whisk together the flour, baking powder, baking soda, salt, cardamom, and cinnamon.
- Beat the butter and brown sugar on medium speed for 3–4 minutes until fluffy. Scrape the bowl.
- Beat in the eggs one at a time, scraping the bowl as needed. Mix in the vanilla and sour cream. A slightly curdled appearance at this stage is fine.
- On low speed, add one third of the flour mixture, half the milk, another third of the flour, the remaining milk, and the remaining flour. Mix only until combined. Finish with a few folds by hand.
- Spread into the pan and smooth the surface. Bake for 30–38 minutes, checking from 30 minutes, until the center springs back lightly and a toothpick comes out clean or with a few moist crumbs.
- Cool in the pan for 15 minutes, then lift onto a rack and cool completely, about 1 hour.
- Whisk the powdered sugar, 1 tablespoon milk, and vanilla until smooth. Add more milk, a few drops at a time, only if needed for a thick but pourable glaze.
- Spread a thin layer over the cooled cake. Let stand about 15 minutes for the glaze to settle before cutting into 12 squares.
Notes
Bake 30–38 minutes. Cooling and setting: about 1 hour 30 minutes. Total: about 2 hours 30 minutes. Oven: 350°F (175°C), conventional.

Storage and Serving
Store the glazed cake in an airtight container in the refrigerator for up to 4 days. Let individual slices stand for about 20 minutes before serving. Freeze the unglazed cake, tightly wrapped, for up to 2 months. Thaw before adding fresh glaze.
