1 1/2 cups (190g) all-purpose flour

2 teaspoons baking powder

1/3 cup (80ml) canola oil

1 cup (200g) granulated sugar

1 cup (240ml) unsweetened plant-based milk (almond, soy, oat)

2 teaspoons vanilla extract

2 tablespoons orange juice

Glaze:

1 cup (200g) powdered sugar

3-4 tablespoons orange juice

How to make it:

Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan. Line the bottom with parchment paper for easy removal.

In a large bowl, whisk together the orange zest, flour, and baking powder.In a separate bowl, whisk together the oil, sugar, plant-based milk, vanilla extract, and orange juice until well combined.

Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.

Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

While the cake cools, prepare the glaze. In a small bowl, whisk together the powdered sugar and orange juice until smooth and thin enough to drizzle. You can adjust the consistency by adding more orange juice by the teaspoonful.
