1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 medium onion, diced
2 cloves garlic, minced
1 (14.5 oz) can diced tomatoes, undrained (fire-roasted for extra flavor!)
1 (16 oz) package fettuccine or your favorite pasta
1 (14.5 oz) cup heavy cream
1 cup chicken broth
2 tablespoons Cajun seasoning (adjust to your preferred spice level)
1/2 cup grated Parmesan cheese, plus extra for garnish
Salt and pepper to taste
Fresh chopped parsley, for garnish (optional)
