Easy Ramen Carbonara

Easy ramen carbonara with eggs, parmesan, and bacon. A quick, creamy dinner made in about 15 minutes with overlapping preparation and cooking; allow longer if the water or bacon needs more time.

I made this dish on a night when the pantry looked a little bare and I needed dinner on the table fast. A couple of ramen packs sat in the cupboard, and I remembered how creamy carbonara always brings comfort. I decided to combine the two and see what happened. The result was a warm bowl of noodles that felt far more special than the effort required.

What I like about this recipe is how quickly it comes together. The noodles cook in minutes, and the sauce forms right in the pan with simple ingredients. The eggs and cheese create a smooth, rich coating that clings to every strand. It tastes like a proper comfort meal, yet it fits into even the busiest evening.

When I served it, the bowls emptied fast. The creamy texture, the salty bacon, and the peppery finish made it hard to stop at one helping. It is the kind of meal you turn to when time is short but you still want dinner to feel warm and satisfying. It has become one of those quiet favorites in our home.

Questions you may have about this recipe

Do I have to use the ramen seasoning packets
No. The cheese, egg, and bacon provide enough flavor.

Can I use regular pasta instead
Yes. Spaghetti or linguine work well.

How do I keep the eggs from scrambling
Remove the pan from heat before adding the egg mixture and toss quickly. Use commercially pasteurized shell eggs for both the whole egg and yolk, since the off-heat sauce is not guaranteed to reach 160°F.

Can I make this without bacon
Yes. You can skip it or use cooked mushrooms for a different flavor.

Is this recipe good for leftovers
It is best eaten fresh. Refrigerate leftovers promptly within 2 hours (1 hour above 90°F) at 40°F or below, use within 3–4 days, and reheat to 165°F. Add a splash of water if needed; the sauce may set rather than stay silky.

What you need to make Easy Ramen Carbonara

2 packs instant ramen noodles, seasoning packets discarded

6 cups water for boiling noodles

1 tbsp olive oil

3 oz bacon, chopped

2 cloves garlic, minced

1 large commercially pasteurized shell egg

1 yolk from a commercially pasteurized shell egg

1/2 cup grated parmesan cheese, plus extra for serving (optional)

1/4 tsp black pepper, plus extra for serving (optional)

1/4 tsp salt

How to make Ramen Carbonara

Bring 6 cups water to a boil. While the water heats, heat the olive oil in a skillet over medium heat.

Add the chopped bacon to the skillet and cook until crisp while the water heats.

While the bacon cooks, whisk the commercially pasteurized whole egg and yolk with the parmesan, pepper, and salt in a bowl.

When the bacon is nearly crisp and the water is boiling, cook the ramen according to package directions.

Stir the garlic into the bacon and cook for 30 seconds, then remove the skillet from the heat.

Reserve 1 cup of the starchy noodle cooking water, then drain the noodles.

Immediately add the hot noodles to the skillet with the bacon, keeping the skillet off the heat.

Pour in the egg mixture and toss quickly off the heat until the noodles are evenly coated. Use commercially pasteurized eggs because this off-heat sauce is not guaranteed to reach a safe cooking temperature.

Add reserved noodle water a little at a time until the sauce is silky and loose enough to coat the noodles.

Serve right away, with extra parmesan and black pepper if desired.

Allow about 5 minutes preparation and 10 minutes cooking with the tasks overlapping; water boiling and bacon cooking may take longer.

Tips

Use commercially pasteurized eggs and keep them refrigerated until shortly before preparing the sauce. Do not leave them out for prolonged periods.

Always remove the pan from heat before adding the egg mixture.

Add the starchy noodle water slowly to control the sauce texture.

Finish with extra black pepper if desired; it is optional.

  • 3 oz bacon, chopped
  • 2 cloves garlic, minced
  • 1 large commercially pasteurized shell egg
  • 1 yolk from a commercially pasteurized shell egg
  • 1/2 cup grated parmesan cheese, plus extra for serving (optional)
  • 1/4 tsp black pepper, plus extra for serving (optional)
  • 1/4 tsp salt

Instructions

  1. Bring 6 cups water to a boil. While the water heats, heat the olive oil in a skillet over medium heat.
  2. Add the chopped bacon to the skillet and cook until crisp while the water heats.
  3. While the bacon cooks, whisk the commercially pasteurized whole egg and yolk with the parmesan, pepper, and salt in a bowl.
  4. When the bacon is nearly crisp and the water is boiling, cook the ramen according to package directions.
  5. Stir the garlic into the bacon and cook for 30 seconds, then remove the skillet from the heat.
  6. Reserve 1 cup of the starchy noodle cooking water, then drain the noodles.
  7. Immediately add the hot noodles to the skillet with the bacon, keeping the skillet off the heat.
  8. Pour in the egg mixture and toss quickly off the heat until the noodles are evenly coated. Use commercially pasteurized eggs because this off-heat sauce is not guaranteed to reach a safe cooking temperature.

Notes

Use commercially pasteurized shell eggs for both the whole egg and the yolk. Keep eggs refrigerated until shortly before preparing the sauce; do not leave them out for prolonged periods. The hot noodles alone do not guarantee that the eggs reach 160°F. This dish is best eaten immediately. Refrigerate leftovers promptly within 2 hours (1 hour above 90°F) at 40°F or below, use within 3–4 days, and reheat to 165°F. A splash of water can loosen the noodles, but the sauce may set when reheated. Bacon may be omitted or replaced with cooked mushrooms; extra parmesan and pepper are optional.
