What you need to make Hobo Stew:

1 tablespoon olive oil

1 medium onion, chopped

2 stalks celery, diced

2 carrots, diced

1 pound ground beef

2 cloves garlic, minced

2 tablespoons all-purpose flour

2 cups beef broth

1 (14.5 ounce) can diced tomatoes, undrained

1 (15 ounce) can cut green beans, drained

4 cups peeled and diced potatoes (about 3-4 medium potatoes)

2 cups peeled and chopped carrots (and 1-2 medium carrots)

1 teaspoon dried thyme

1/2 teaspoon dried oregano

1 bay leaf

Salt and freshly ground black pepper, to taste

Chopped fresh parsley (optional, for garnish)

How to make it:

Heat olive oil in a large Dutch oven or pot over medium heat. Add onion, celery, and carrots. Cook for 5-7 minutes, or until softened.

Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.

Stir in garlic and cook for 30 seconds, or until fragrant.

Sprinkle flour over the meat and vegetables and cook for 1 minute, stirring constantly.

Pour in beef broth and diced tomatoes. Stir to scrape up any browned bits from the bottom of the pot.

Add green beans, potatoes, carrots, thyme, oregano, and bay leaf. Season with salt and pepper to taste. Bring to a boil, then reduce heat, cover, and simmer for 30-40 minutes, or until potatoes are tender.

Remove bay leaf before serving. Garnish with chopped fresh herbs, if desired.
