Yummy Homemade Egg Noodle Recipe

It’s so easy to make yummy homemade egg noodles! Freshly homemade pasta is a delight everyone should experience at some point! There’s just nothing like it. It’s a bit messy, but it’s rewarding to see flour, salt, and eggs turn into noodles for soup or casseroles.

Egg Noodles Are Homemade Comfort Food Anyone Can Make

Many years ago, our middle grandson Nick called me and asked, “GB, can we make homemade noodles?” Nick has always been my foodie boy. Oh, my gosh, yes, let’s make egg noodles! I was over the moon to get his invitation!

He was nine or ten at the time, and I dropped everything. I’m pretty sure I broke the land speed record from our place to his.

We are blessed with six grandchildren and outrageously lucky to have them all live nearby. When a grandchild invites me or asks me to do something with them, I jump at the chance to make memories together. I ache to have my kitchen full of teenagers again, and I cherish our shared meals.

I’m especially grateful for the memories now that the oldest will be twenty-four this year, we’ll have three in college, one a senior in high school, and the youngest one is a teenager!

Leave Memory Lane And Let’s Make Some Homemade Egg Noodles

I found a recipe that uses mainly yolks because I use egg whites only to make coconut macaroons for our granddaughters. The light, crisp cookies are gluten-free and their favorite treat!

I get our eggs from a farm, and sometimes, we get “pullet eggs” from young hens (pullets) who haven’t hit their egg-laying groove. The eggs are quite small, which explains why the photo and the recipe don’t quite match. The young hens often lay eggs with double yolks, too, and when I get one, I think it means I’m lucky!

You’ll never find pullet eggs in grocery stores because they are too small for retail standards, but they are wonderfully fresh and full of flavor. If you find yourself without pullet eggs (and you probably will), follow the recipe!

Begin with flour and salt on a clean work surface and make a well in the middle. Break the eggs into the center and beat them with a fork. Then, using your fingers, gradually pull the flour into the egg mixture and add water a teeny bit at a time until you have a nice dough ball.

Next, you’ll knead the dough like kneading bread. Push the heel of your hand into the dough, rotate it a quarter turn, and do it repeatedly. Keep doing this on a floured surface until you have a ball of dough that is smooth and elastic. This process shouldn’t take more than five or ten minutes.

If you have a stand mixer, you can use this recipe and make quick work of noodle making. Here’s what you do:

Add flour to the bowl of your stand mixer and create a well. Drop the egg yolks into the center of the flour well and add salt. Use the standard beater to mix the ingredients. If the dough is too wet, add a little more flour until a ball of dough forms. If it’s too dry, add a bit of water.

Then switch to the dough hook and mix for about two minutes until the dough forms a ball. Let the dough rest for approximately thirty minutes, then roll out the dough as thin as desired on a floured surface.

Use a sharp knife or a pizza cutter to cut into thin, uniform strips about 1/4″ wide. Finally, they need to dry a bit. And that’s it! Voila, noodles!

You can cook them after they’ve dried for about half an hour. If you’re going to use them later, drape the noodles over cooling racks or spread them out on a cotton dishtowel and let them sit for a couple of days. You can also freeze the egg noodles in zipper-type freezer bags.

Homemade Egg Noodles

This easy recipe makes ten servings of delicious homemade egg noodles for soups, casseroles, or served as a simple salt dish with butter and salt.

Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • 2 cups all-purpose flour
  • 3 egg yolks
  • 1 whole egg
  • 2 tsp salt
  • water as needed

Instructions

  • Measure the flour onto a clean work surface.
  • Make a well in the center and add egg yolks, whole egg, and salt.
  • With hands, thoroughly mix the egg into the flour.
  • Add water one tablespoon at a time, mixing thoroughly after each addition. (Add only enough water to form dough into a ball.)
  • Turn dough onto a well-floured board; knead until smooth and elastic, about 10 minutes. Cover; let rest 30 minutes.
  • Divide the dough into two pieces and work with one half of the dough at a time.
  • On a well-floured surface, roll out the dough to the desired thickness from 1/4-inch to paper-thin; the thickness is up to you!
  • Flour your work area as needed to keep the dough from sticking.
  • Use a sharp knife or pizza cutter to cut in strips as wide or narrow as you like but keep the width uniform so they'll all cook happily ever after.
  • Boil the noodles in 3 quarts of water with a tablespoon of salt until they are as tender as you like them and use in soups or stews are serve as a side dish with butter and cheese or both!
  • Notes

    If you have a stand mixer, you can use this recipe and make quick work of noodle making. Here's what you do:

    Add flour to the bowl of your stand mixer and create a well. Drop the egg yolks into the center of the flour well and add salt. Use the standard beater to mix the ingredients. If the dough is too wet, add a little more flour until the dough ball forms. If it's too dry, add a bit of water.

    Then switch to the dough hook and mix for about two minutes until the dough forms a ball. Let the dough rest for approximately thirty minutes, then roll out the dough as thin as desired on a floured surface.
